Second on our ranking of Siquijor's best tables, and the most discreet address on the island. You will find it nowhere else: not on TripAdvisor, not on the aggregators, not in the travel guides, not even on the provincial tourism office's list of accredited restaurants. Aside from a Google listing and a mention on a French-language blog, NGAON TA'S Lingin has almost no online existence at all.

This is exactly the kind of place a star-based ranking cannot see, because it does not appear on one. No visitor arrives here by chance — and those who go once go back.

Island cooking with a real French touch

Nothing about the place gives this away from the outside, and it is the whole story: the chef is Filipino, he speaks French, and he worked in France.

Let us be precise, because the distinction matters: this is not a French restaurant. You do not come here for a bistro menu. It is island cooking, made with island produce, onto which he has grafted a technique learned in France — and you taste it in the sauces, the cooking times, the plating, rather than in the names of the dishes. We know of no other kitchen on Siquijor that works this way.

For French-speaking travellers that has a very concrete consequence: you can talk about your meal with the person cooking it, in your own language, and he will know exactly what you are after. That is rare anywhere. Here it is unique.

Where it is

Up in the hills, a few minutes by scooter from San Juan. Not on the coast road, not facing the sunset: you have to climb, and you have to mean it. The atmosphere is deliberately discreet — this is a small table, not a place you stumble into.

The sign reads NGAON TA'S Lingin. Ask for the full name locally — "Lingin" on its own will not always be enough.
